With a fascinating history, bathed in scientific curiosity, the place that once housed the Bordeaux Institute of Natural Sciences now serves as the setting for La Zoologie. Renovated into a luxury hotel, the building has retained the enigmatic charm of its origins, which permeates every corner. This witness of another time, a happy marriage of stone, metal and glass, has been joined by two wings that take up its codes while giving them a touch of modernity.

It is in the Botanique wing that the Banksia dining cellar / delicatessen awaits you. Its name, in a nod to the place it occupies, refers to an endemic Australian tree that is still little known in our countries. The chef at the restaurant La Zoologie, selects himself ingredients full of character and nobility, sourced from local producers. Worked with love and talent, they lend themselves to preparations whose apparent simplicity conceals treasures of greed. Halfway between the refinement of Parisian bistronomy and the casualness of the tapas experience, Banksia honours fresh, local and organic ingredients. Among the creations you will find on the colourful boards of the micro-restaurant, fine cheeses and charcuterie, tartines, vegetable dips, gazpacho, and ceviche are among the great favourites. Try surprising specialities such as peppers stuffed with a hazelnut preparation spiced with cumin and ajwain, ajo blanco (gazpacho with almonds and garlic), homemade blinis with finely selected caviar, or hummus with carrots and cumin.
