No fixed starter-main-dessert structure. We move away from rigid codes for a freer, more vibrant experience. Dishes arrive as soon as they are ready, still hot and at their peak. We share, we taste, we pick… and often we reorder, because pleasure calls for more. The cuisine follows the seasons without compromise: market produce defines the menu, not the other way around. A spontaneous and sincere approach where generosity and creativity meet for a convivial dining experience.

The Banksia wine cellar is not just a wine list — it is a living selection of bottles chosen with passion, mainly from South-West France, and from elsewhere when truly worth it. Characterful wines, often unique, telling the story of a terroir, a winemaker, and a craft.

Accessible directly from the street, without going through the hotel, Le Banksia is open to everyone — hotel guests or Bordelais looking for a good address. Just a few steps from Bordeaux Saint-Jean station, it is also the perfect stop before a train or after a walk in the area.
